Chicken Sandwich

Ingredients
1 small bowl cold leftover chicken, shredded
Thinly sliced cucumber
Sliced tomato
Alfalfa shoots
Lettuce leaves
2 tbsp margarine
Freshly ground black pepper
Dash of white pepper
Slices of wholemeal bread

Method
Spread margarine on a few slices of bread. Arrange some of the shredded cold leftover chicken on several slices of the wholemeal bread. Top with cucumber, tomato, alfalfa and lettuce leaves. Add a sprinkling of ground black and white pepper. Top with another slice of buttered bread and serve for breakfast or brunch.
