Green beans with egg is an easy stir fry vegetable dish. For this dish, the natural sweetness of the beans and egg take centrestage.
Serves 2-3
Ingredients:
1/3 cup of thinly sliced organic green beans
1 medium-sized organic egg, beaten
1 shallot, finely-sliced
1 sliver of garlic
1tsp of organic virgin coconut oil
Method:
For this dish, the green beans were cooked twice*. Firstly, I place the sliced organic green beans in a bowl and place in a pot of water and steam under high heat for 15-20 minutes. This is to ensure that the green beans are properly cooked as I would only be stir-frying it with the egg for the shortest time.
When the green beans are cooked, heat a small pan under medium heat. Add the coconut oil, shallots and garlic and stir fry for a few seconds. Add in the green beans and egg and stir until the egg is fully cooked.
I serve this vegetable egg dish with a bowl of organic brown rice.
* You may skip this part, especially when the kids are older and they like a slight “crunch” to the vegetables.
