Chicken Patties

Ingredients
500g minced chicken meat
1 onion, finely diced
2 tbsp chopped spring onions and Chinese parsley
1 egg, lightly beaten
3 to 4 tbsp oil
Seasoning:
1/2 tsp salt
1/2 tsp sugar
1/2 tsp chicken stock granules
1/8 tsp freshly ground black pepper
1/8 tsp pepper
1 slice day-old bread, diced
Combine:
2 tbsp plain flour
1 tbsp cornflour
Method
Combine chicken, onion and egg in a mixing bowl. Stir well to mix. Add seasoning and mix well. Stir in chopped spring onions and parsley. Divide into equal portions and shape into round balls. Press down into small patties of about 1cm thickness.
Coat patties in the combined flour. Dust off excess flour and shallow-fry patties in a heated saucepan until golden brown. Dish out and serve with bread.
