This is what I did on weekends when my supply for Z's food is running low. I used 4 medium size organic zucchinis.
Step 1:
I washed and cut them up into 1.5-2 inches cubes before steaming them. With zucchinis, I don't peel the skin as most of the nutrients are in the skin.

The picture above shows how the zucchini looks like after 15 minutes of steaming under high heat.
Step 2:
I use my OXO food mill to puree the zucchinis. Now that Z is comfortable with texture, I use the coarsest disk to get a chunkier texture.

This is how the zucchinis look like after being pureed. It's chunky and has a very slight bite to it. And because the vegetable has high water content, it comes out slightly runny.
Step 3:
With the 4 medium size zucchinis, I get two full trays of food for Z, ready to be frozen.

Zucchinis are a great vegetable for babies to start out with. Other than the fact that they are rich in folate, potassium, Vitamin A and Vitamin C, they are mild in taste, compared to other vegetables. And they smell and taste sweet so Z likes them a lot. I usually mix them together with cereal, quinoa or rice porridge and Z will always be kicking for more.
