Ingredients:
1 cup of organic zucchini
1 cup of organic sweet potato
1 cup of organic broccoli
1 cup of organic cauliflower
1 cup of organic short pasta
1-2 cups of water
Method:
Wash and dice the vegetables to 1/8 of an inch cubes. Cook the sweet potato with 1 cup of water first. After 5 minutes, throw in the rest of the vegetables and pasta and cook under low heat until all ingredients are soft and tender (approximately 10-15 minutes).
I basically just cook with the vegetables that I have on hand, so don't let the recipe limit your culinary creation. Go wild with it. :) And I did not make it as soupy as regular minestrone as it will just be too messy for my son Z to have (and for me to clean up).
NB: Blend the dish if your child is not used to texture yet.
